Economic benefits with Sous-Vide

U925

Thermal Circulator with Storeplus Box

This post originally appeared on the Polyscience blog, but we thought we would re-post it here because we agree with it wholeheartedly:

There is a strong focus on the culinary benefits amongst the economic benefits with sous vide: more intense flavors,  more moisture, perfect texture, more nutritions, 100% success rate and repeatability etc.

But if you are wondering if sous vide is right for you, the economic benefits may play an important role!

  • With less shrinkage you will have more yield. With certain meat cuts it can be up to 30% that affects instantly your food cost in a positive way.
  • Secondary cuts of meats turn out with the most delicious texture and allow you more flexibility with food cost.
  • No waste through overcooking since core temperature is precisely controlled and with 100% success rate.
  • Increased productivity through balancing work load since you don’t have to do the main work during main service hours. In fact they can be distributed evenly throughout the week by rethermalizing when demand is high on weekends.
  • You will run more energy efficient equipment and you will see it in your bill.
  • Portion control and stock requirements are more easy and more precise with sous vide menu items.
  • Your mise-en-place can hold for a longer time and is less perishable, with the consequence of less waste.
  • Lesser waste also by a lower chance of cross contamination.
  • Easy to learn and follow process of sous vide cooking requires less training, which can be very costly
  • Yes, more intense flavor and texture may translate into increased customer loyalty.

    Sleeper

Rennis Garner, Showroom Manager at JB Prince

Rennis Garner, Showroom Manager at JB Prince

We recently asked Rennis Garner, our showroom manager, if she could tell us of any item in the showroom that she would consider a “sleeper”.  An item that  is really great, but which no one really seems to know about.

“The Victorinox 5 inch serrated knife.” She told me.”It’s the most amazing knife. There is something very special about it  (our item #V846 at www.jbprince.com). The angle of the blade to the fibrox handle almost feels offset. It sails through onions like nothing you have ever seen. The serrated edge is small but not micro, so it’s almost like a straight edge, but better. You have to try it to appreciate it, but it is one of my favorites.”
